3lbs Chicken leg quarters (Cleaned and Chopped)
1 White Onion (Chopped)
3 Medium Carrots (Peeled & Chopped)
2 Large Potatoes (Peeled & Chopped)
1/2 Green Pepper (Chopped)
Scallions (Chopped)
1 Scotch Bonnet Pepper
Ketchup
Vegetable Oil (For Frying)
Curry Powder
Garlic Powder
Onion Powder
Salt
Directions:
In a large bowl – season chicken with garlic powder, onion powder, salt, 1/2 of the scotch bonnet pepper and curry powder. Set aside.
Heat oil in a medium cast iron pan until temperature reaches 350°. Add chicken and fry until browned. Remove from heat.
Strain excess oil and return to heat; add curry powder to the pot and slowly stir on low heat until powder darkens. Add onions, carrots, scallions, green peppers and remaining half of the scotch bonnet pepper. Allow vegetables to simmer on low heat for ten minutes, add chicken and more **seasoning** to the pot if necessary. Simmer for an additional fifteen minutes; mix in ketchup and potatoes…cook until potatoes are tender.
**Adjust seasoning to your liking**
