Ingredients:
2 lbs. pork (I used the ribs)cut into medium pieces
1 tsp. salt
1 tsp. black pepper
2 tsp. food browning
Few pimento seeds, crushed
A small piece of ginger root, crushed
2 cups water
1 tbsp. ketchup (optional)
2 tsp. vegetable oil
1 sprig thyme
Finely chopped the following:
1 stalk scallion
1 small hot pepper
1 clove garlic
1 small sweet pepper (green)
1 small onion
1 large carrot
2 Irish potatoes
Method
Wash meat with vinegar water solution. Drain
Season meat will all ingredients, except for oil, water and ketchup
This is optional, but it is best to marinate your meat for at least 15 minutes before cooking.
After 15 minutes. Put a Dutch pot on high heat, add the vegetable oil. Put seasoned meat into the hot oil. Cover pot and let the meat cook. Do not add any water as yet. The juice from the meat will cook it for at least 10-15 minutes.
When the water dissolved, add two cups of water. Cover pot and let the pork cook. The pork is very soft. Therefore, it only takes 2 cups of water to cook it.
Taste and add more salt if need. Add the ketchup (optional). Cover pot and simmer over medium heat until gravy thickens. Remove from heat.
