Bahamian Steamed Chicken

Chicken Legs – Cleaned & Seasoned

1/2 C Vegetable Oil

1 Small Onion – Chopped

1/2 Medium Green Pepper – Chopped

2 Celery Stalks – Chopped

2 Tbsp. Tomato Paste

1/2 C Diced Tomatoes

1/4 Tsp. Fresh Thyme

1/2 Scotch Bonnet Pepper – Minced

Salt (to taste)

Directions:

Add vegetable oil to a large cast iron pan and allow to heat to 350°.  Gently place in chicken legs and allow to fry until an internal temperature of 165° is reached.

Remove chicken from the pan and drain on paper towels.

Place onions, celery, green peppers, diced tomatoes and thyme in that same pan and allow to cook until veggies are tender.  Add tomato paste, salt, pepper and chicken – simmer for fifteen minutes on low heat.  If water is needed; add a 1/4 C, adjust seasoning if need be – allow to simmer for an additional five minutes.
