Banana-Nut Blueberry Bread Pudding

1 1/3 C All – Purpose Flour

2 tsp. Baking Powder

5 Ripe Bananas

1/4 C Coconut Flakes (Unsweetened)

1/4 C Fresh Blueberries

1/2 C Crushed Walnuts

1/4 C Almond Milk

1 C Granulated Sugar

1 Large Egg

Pre-heat oven to 350° F.

Peel bananas and mash in a large bowl.  Sift in flour and mix well.  Add sugar, blueberries, coconut flakes, egg and milk.  Mix until all ingredients are combined.  Place batter in a greased loaf pan and bake for one hour or until a toothpick inserted in the middle – comes out clean.

Allow to cool before cutting.
