Flawless Sweet & Sour Chicken

2 Boneless & Skinless Chicken Breast

1 C Cornstarch

Salt

Pepper

1 Can Pineapple Chunks

1/2 White Onion – Chopped

1/2 Yellow Pepper – Chopped

1/2 Red Pepper – Chopped

1/2 Green Pepper – Chopped

3 Eggs

1 C Vegetable Oil

1/2 C Brown Sugar

1/4 C Ketchup

1/2 C Vinegar

1/3 C Soy Sauce

2 Tbsp Garlic Powder

Directions:

Cut chicken breasts into bite size pieces.  Season with salt and pepper.

Beat eggs lightly in a small bowl.  In a separate bowl, add cornstarch.

Dredge chicken pieces one at a time in cornstarch; then again in the egg mixture.

Brown chicken in oil that has been heated in a cast iron pan over medium-heat.   

Fry until crispy on the outside, but not cooked through.  Remove chicken from skillet.

Add onions, peppers and pineapple chunks to skillet and cook until onions are translucent.

Place chicken and veggies in a baking dish.

Pre-heat oven to 325° for 1 hour.

In a bowl, combine all sauce ingredients – sugar, ketchup, vinegar, soy sauce and garlic powder.  Pour the sauce over the chicken.

Remember to turn chicken every fifteen minutes.

Pair with fried rice and as always…enjoy!
