Holly Jolly Chicken Wraps

Need an easy idea for holiday brunch…try this amazing chicken salad recipe!

2lbs Chicken Breast

Spinach Wraps

1/4 Cup Mayonnaise

1/2 Habanero Pepper

The juice of a whole lime

Green Onions (finely chopped)

Celery(finely chopped)

1/4 Cup Cranberries

1/4 Cup Almonds

Tomatoes

Salt and white pepper to taste

In a medium pot, boil chicken breast uncovered for one hour…adding salt and Habanero Pepper.  Once chicken has cooked – remove from pot and allow to cool for about thirty minutes.  Using two forks, carefully shred chicken breast.

Place shredded chicken in a large bowl.  Add salt, pepper, green onions, celery, craisins, aomonds and mix.  Slowly fold in mayonnaise.  Add lime juice.

Heat wrap on a warm griddle.  Add chicken mixture to the warm wrap and fold.
