HONEY GARLIC WINGS

3lbs Whole Chicken Wings

Season-Salt

3 Whole Lemons

1 Whole Habanero Pepper

2 1/2 Cups All-Purpose Flour

1 tsp. Paprika

1/4 tsp. Salt

1/4 tsp. Black Pepper

1 tbsp. Garlic Powder

2 Whole Eggs (beaten)

2 1/2 Cups Vegetable Oil

1 1/4 Cup Honey

2 tbsp. Unsalted Butter

4 Garlic Cloves (minced)

1 tbsp. Parsley

1/4 tsp. Red Pepper Flakes

2 tbsp. Cornstarch

1 Cup Water

After cleaning – portion each wing.  Add lemon juice, season-salt and habanero pepper.  Rest in refrigerator for two hours.

In a small bowl, beat eggs and season with salt and pepper.  Sift flour in a separate bowl and season with paprika, red pepper flakes, parsley and garlic powder.  Dip chicken in egg mixture (shaking off excess).  Place chicken in flour…making sure to fully cover and shake off excess.

Heat a large cast iron pan and add oil once hot.  Fry chicken on both sides for 3 – 4 minutes or until an internal temperature of 165° is reached.  Drain on paper towels.  Drizzle honey garlic sauce on wings…serve hot.

Honey Garlic Sauce

Melt butter in a small, heated saucepan.  Add minced garlic and cook until tender.  On low heat – add in honey.  In a cup add water and stir in cornstarch…mixing until there are no lumps.  Slowly pour in cornstarch mixture.  Cook on low heat for 1 minute or until sauce thickens, stirring occasionally.
