This salad is made up primary of couscous which is a small grain-like pasta, vegetables, and herbs all tossed in lemon juice. Basil and lemon juice is a classic Mediterranean flavor combination. It’s so refreshing and bright! Perfect for spring and summer months.
It’s hard to believe this salad doesn’t have a fancy dressing and yet it’s so flavorful! I attribute this to the two different types of onions, the flavorful vegetables and the combination of fresh mint and lemon juice.
The texture is really nice and literally rolls around on your tongue. The tiny pearls of couscous are very enjoyable to eat!
Recipe
1 ½ cups dried Israeli couscous, also called pearl couscous
Salt and fresh ground black pepper
1/4 cup extra-virgin olive oil
1 teaspoon finely grated lemon zest
2 to 4 tablespoons fresh squeezed lemon juice, depending on taste
1 medium English cucumber, diced
1 large tomato, diced
1/2 cup coarsely chopped fresh herbs; use any combination of fresh parsley, Oregano, basil, dill, or mint
