Ingredients:
2 lbs Grouper/Snapper Fish (cleaned and seasoned)
1/2 C Vegetable Oil
3/4 C Flour
1 Onion (chopped)
1 Potato (chopped)
1 Carrot (chopped)
Thyme
2 tbsp Tomato Paste
Salt
1 Habanero Pepper (minced)
Directions:
Fry fish PARTIALLY until both sides are brown. In a large cast iron pan, heat oil. Slowly stir in flour until it browns.
**Do not leave flour unattended – as it will burn.**
Add onion, carrots, potatoes, thyme, tomato paste and mix well.
Add about 4 C of boiling water, salt and habanero pepper – allow to simmer for 20 minutes or until fish is fully cooked.
Serve with yellow grits, johnny bread, white rice or home-made bread.
