So – Delish Steamed Conch

Bahamian Cook Nook

2 Conchs (tenderized)

1/4 C Fresh Lemon Juice

1/2 Medium Onion (chopped)

1 Small Carrot (chopped)

1/2 Habanero Pepper (minced)

2 Tbsp. Tomato Paste

1 C Diced Tomatoes

1/4 tsp. Fresh Thyme

Salt

DIRECTIONS:

In a large saucepan; saute onions, tomatoes and carrots until tender.  Stir in tomato paste and a few tablespoons of water.  Let simmer for 5 minutes.  Add conch, lemon juice, thyme and pepper.  Allow to simmer an additional 10 – 15 minutes.  Add salt to taste.
