3lbs Chicken Wings (cleaned & portioned)
1 C Lemon Juice
Season-Salt
1/2 C Cayenne Pepper
3 Habanero Peppers (Chopped)
2 C Grace Hot Sauce
3 Tbsp. Vinegar
2 C Vegetable Oil
In a small bowl add chopped peppers and vinegar – set aside.
Place wings in a large mixing bowl; add lemon juice, cayenne pepper and season salt(measure to your liking). Cover chicken entirely with seasoning and allow to rest for ten minutes. Add 1/2 of the vinegar mixture to the chicken and place in the refrigerator for 3 hours.
Remove chicken from the refrigerator and get rid of any excess moisture, using paper towels to pat dry.
Heat oil in a large cast iron pan until temperature reaches 350°. Fry chicken until an internal temperature of 165°F is achieved.
Remove from heat and drain on paper towels.
Add remaining vinegar mixture to bowl with hot sauce and drizzle over hot wings.
