6 Whole Wings (Cleaned & Portioned)
1 1/2 Tbsp. Season Salt
2 Tbsp. Garlic Powder
1 1/2 Tbsp. Lemon Pepper Seasoning
1 tsp. Crushed Red Pepper
1/2 tsp. Olive Oil
2 1/2 Cups Vegetable Oil
1 1/4 Cups All-purpose Flour
1/4 Cup Cornstarch
1 Tbsp. Butter
1/4 tsp. Salt
In a medium bowl, add chicken wings. Sprinkle olive oil over the wings and toss. Add season salt, garlic powder, one tbsp. of lemon-pepper seasoning, & 1/2 tsp. of crushed red pepper – making sure each wing is well coated. Cover bowl and set aside.
In another large bowl – add flour, salt, remaining crushed red pepper, and cornstarch. Mix with a fork until combined. Coat each wing with flour, shaking off any excess and place on a rack.
LEMON-PEPPER MIXTURE
Melt butter in a small saucepan over medium- heat. Add 1/2 tbsp. of lemon-pepper seasoning and stir. Turn stove to low heat for two minutes; stirring occasionally.
In a large cast iron pan; heat vegetable oil until temperature reaches 375°. Fry on each side for three to five minutes or until chicken reaches an internal temperature of 165° F. Remove from heat, drain on paper towels and toss with lemon-pepper mixture. Serve hot.
