The Best Turkey Meatloaf

1 Package of Lean Ground Turkey

1 Small Onion – Finely Chopped

1/2 Green Pepper – Finely Chopped

3 Garlic Cloves – Minced

2 Whole Mushrooms – Chopped

1 Whole Carrot – Peeled & Grated

1 C Raw Oats

1 Cup Almond Milk

2 tbsp. Butter

2 C Honey Garlic BBQ Sauce

Salt

Black Pepper

Garlic Powder

Onion Powder

Cayenne Pepper

Directions:

Preheat oven to 350°.  Spray a small loaf pan with cooking spray and set aside.

Place butter in a large skillet and allow to melt.  Add onions, garlic, sweet pepper and carrots – let cook until tender.  Remove from heat and allow to cool.  Soak oats in a large bowl using the almond milk.  Allow to sit until veggies have cooled.

Add vegetables to the bowl of pre-soaked oats.   Season to taste.  Add ground turkey and mix all ingredients until fully combined.  Place meat mixture in a small loaf pan and bake for 45 minutes or until an internal temperature of 165°F is reached.

Add bbq sauce to the top of the meatloaf and bake for an additional 10 minutes.  Allow to cool before cutting.
