The Nook’s Pork Chop Burger

1lb Center-Cut Pork Chop

Freshly Squeezed Lemon Juice

Season-Salt

Cayenne Pepper

2 Eggs

2 C. All-Purpose Flour

Sesame-Seed Buns

Iceberg Lettuce

1 Tomato – sliced

1 White Onion – sliced

Mayonnaise

Mustard

Ketchup

Two Cloves Of Garlic

Vegetable Oil

2 Tsps. Unsalted Butter

Directions:

Remove pork chops from packaging and wash under cold water.  Using a meat tenderizer; beat chops until thin.    Season with lemon juice, cayenne pepper and season-salt.  Set aside.

In a small bowl, beat eggs and season.  Add flour to a large mixing bowl and season with season-salt and cayenne pepper. Place pork chops in egg mixture – allowing any excess to run off – add chops to flour mixture and shake off any extra.

Place oil in a cast iron pan and heat until it reaches 350°.

Fry pork chops until golden brown and an internal temperature of 145° is reached. Remove from oil and drain on paper towels.

Crush garlic cloves and add to butter – melt in the microwave for 10 seconds. Brush on garlic butter and  toast buns on a heated grill.

Build Burgers:

Place mayo, ketchup and mustard on bottom bun.  Add lettuce, tomato, onions and pork chop.  Add mayo to top bun and cover.
